    About the coffee

This coffee is produced by Marco Ricardo Morocho and his wife Andrea Manoslavas, at their farm La Fortaleza in Nanegal, northern Ecuador.

Marco and Andrea have been working with Caravela's PECA technicians to improve farm management and processing to be able to get better results year after year.

The processing of this coffee starts with a good picking of the ripe cherries which are then floated to take out the less dense cherries. The cherries then undergo an in-cherry fermentation in closed tanks for 24 hours before pulping. The coffee is fermented again for a further 13 hours, washed, and left to drain for 4 hours before being taken to the drying beds. In the drying beds, it takes from 7 to 15 days depending on the climatic conditions to reach the ideal humidity level.

This coffee is a great example of well-considered, advanced washed processing. Expect high quality complex florals, sweet caramel and soft blueberry notes.

    Innovative Processes

These coffees have gone through innovative or experimental post-harvest processing methods that create exciting new flavors profiles above and beyond what you’d typically expect of the terroir.
