Our roasting schedule

We roast coffee twice a week on Tuesday and Thursday, and all coffee orders are dispatched within two working days of ordering. The coffee you receive from us will be roasted and sent to you fresh, without exception.

Delivery - Just coffee

Delivery is £3.50, or free if your order is £20 or over. Our
delivery service is Royal Mail Tracked 24, meaning delivery time averages one
working day. Your coffee will likely arrive Thursday, but occasionally Friday.
If your coffee doesn’t arrive by Saturday, then please get in touch

Delivery - Just equipment

If you’re ordering brewing equipment only, things work
slightly differently. Delivery will always be £5.50 and your order will be sent
by DPD Next Day. It will be dispatched the next working day, and will arrive
the next working day after that.

Delivery - Coffee and Equipment

If you’re ordering coffee and brewing equipment together,
then postage will be £5.50 and your order will be sent by DPD Tracked. But
because your coffee will be roasted to order on the next Tuesday, the whole
delivery will be sent out on the Wednesday and arrive on the Thursday.

Produced by a group of smallholders located in Huehuetenango, working with Caravela’s Coffee Producer Education Program (PECA) , fuelled by the spirit of innovation and experimentation.

The result is a super clean, smooth, and unexpectedly complex washed coffee.

The coffee is fermented in the cherry for 12 hours, then pulped and fermented again, submerged alongside the pulped cherry in concrete tanks for 20-30 hours.

The ProducersLa Conserva

La Conserva is a microlot made up from coffees produced by small-holder farmers, predominantly in Huehuetenango – the highlands in western Guatemala.

In collaboration with Caravela’s Coffee Producer Education Program (PECA) they have put together this exceptional community blend.

La Conserva (Spanish for fruit jams or preserves) is inspired by the cultural heritage for making sweet jams during Holy Week in Guatemala.

This lot, put together by our importer partners Caravela, is made up of coffees processed with the submerged fermentation technique. The coffee has been selected from lots from by different small-holders that meet a particular flavour and quality profile.

Submerged Fermentation

The coffee/ Process Submerged Fermentation

In this instance, Submerged fermentation refers to the process where the coffee is fermented in the cherry for 12 hours, then pulped and fermented again, submerged alongside the pulped cherry in concrete tanks for 20-30 hours.

The purpose of this is to allow coffees being processed below 1,600 MASL to have a longer fermentation at lower temperatures which is beneficial for stability, creating exciting flavours and avoiding spoilage.

In coffees processed with submerged fermentation, the acidity tends to be reduced as acids are dissolved by the water. This reduced acidity allows for greater perception of sweetness and body, bringing you this exceptionally balanced coffee. After the final fermentation, the coffees are fully sun-dried on either covered raised beds or traditional concrete patios.

How to brew La Conserva

We are loving our La Conserva on Aeropress.

Use 16g of coffee ground fine, add 240g of boiling water, then give your Aeropress a swirl/ stir to make sure all the coffee has come into contact with water.

You can either leave it to brew for a bit longer or plunge straight away, that is up to you.
