Coarse grind (like breadcrumbs)

Warm the empty cafetière by rinsing with hot water – this helps maintain the right brewing temperature.

Add 15g (1 tbsp) of coffee for every 250ml of water.

Add water that’s just off the boil (92-96°C) and give it a good stir.

Leave it for 4-5 minutes.

Firmly push the plunger all the way down. If it resists, the coffee’s still extracting, so wait a little longer.
