Grown by Gilberto Baraona, 15 times winner of the El Salvador Cup of Excellence, this is an unusually crisp natural with fresh fruit notes of cherry and strawberry on the nose, balanced with apple, raisin and milk chocolate in the cup. The finish reminds us of a strawberry and cream sweet. 

We roast coffee fresh to order every Tuesday. Please order before 9am on Tuesday for delivery by the weekend.

The Coffee

This coffee is a Pacamara, a hybrid of the Pacas and Maragogype varietals developed by the El Salvadoran Institute for Coffee Research. Pacamaras are renowned for producing large beans and exceptional cup qualities when grown with the right care and attention. Gilberto draws out this potential by meticulously controlling the picking, cherry separation and drying processes, placing the drying area between two hills with a prevailing wind to keep temperatures more stable.

Meet the Producer

Gilberto Baraona is dedicated to quality, experimentation, and the future. The 15-time winner of the El Salvador Cup of Excellence employs 50 full time staff on his farm Los Pirineos, which has been in his family for more than 120 years. Sitting at the top of the Tecapa Volcano, the farm produces natural and honey processed coffee across an ever-growing range of varietals, while playing host to future-focused projects, such as the development of the leaf rust-resistant Central America F1.
